docs: update kernel compatibility to 6.18 LTS / 6.19 stable

Browse Source 
Current stable is 6.19.6, 6.18.x LTS confirmed working.
Reorganize recommended kernels to reflect current state.
- 6.18.x and 6.19.x are now the recommended range
- Keep 6.17.11+ and 6.15.7-6.17.7 as also working
- Add confirmed working versions for 6.18.3 and 6.19.6
